YIELD: Approx. 3 cups
- 1 cup fresh Corsican Mint leaves (other Mints can be substituted)
- 1 cup 100-proof Vodka
- 1/2 cup Brandy
- 1 cup white sugar
- 2 cup water
- 2 - 3 drops green food colouring (optional)
- Pick leaves and wash in cold water.
- Dry leaves between paper towels.
- Coarsly chop leaves and place them in a 1 litre container. (needs to have a lid)
- Add Vodka and Brandy; attach lid and shake contents.
- Store in a cool, dark place for 1 week.
- Place a fine mesh strainer over a clean container.
- Pour the Vodka mixture through the strainer; this will remove the used mint leaves.
- Discard the leaves.
- Transfer the liquid to a new container (that also has a lid)
- Heat sugar and water in a pan; bring to a boil over medium heat, stirring constantly.
- When liquid becomes clear, remove from heat.
- When liquid is still just warm, add it to the Vodka mixture.
- Place lid on container and shake contents.
- Write the 'date' and 'contents' on a label.
- Age liqueur for 1 to 3 months before serving.
- It will seem like a long 3 months!!
When the wait is over, this can be made into the Grasshopper Cocktail, that is very popular. Other uses are: serve it over ice, add it to a glass of sparkling white wine, or mix it with a little heavy cream. It is also really good over vanilla ice cream! This liqueur can be used in any cocktail the asks for Crème de Menthe.
