Serves: 4
- 2 strips Bacon, cooked crisp & chopped
- 1 cup Cabbage, purple, finely cut
- 1 Fennel, bulb, chopped
- 3 tbsp Fennel fronds, (Bronze or Sweet), chopped
- 2 scallions, finely chopped
- 1/3 cup walnuts, chopped
- 1/3 cup sunflower seeds
- 1/4 cup Mayonnaise
- 1 tsp Salt ground black pepper
- 1 tsp Sugar
- 3 tbsp Red Wine Vinegar
- Cook bacon in a pan until crisp; chop and cool.
- In a large salad bowl, place cabbage, fennel bulb, fennel fronds, scallions, walnuts and sunflower seeds.
- Mix together.
- in a small bowl, whisk together mayonnaise, salt and pepper, sugar and red wine vinegar.
- Add mayonnaise dressing to the salad mixture and toss until thoroughly until combined.
- Serve with your favourite dish!
This Slaw can sit in a fridge and let the flavors meld, or serve straight away.
