Serves: 6 - 8
- 1 onion, diced
- 3 tablespoons extra-virgin olive oil
- 1 pound butternut squash, peeled and diced
- 1 clove garlic, minced
- 1/2 teaspoon fine sea salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh Par-Cel
- 1 pound Whole Wheat Pasta, cooked to package instructions
- 2 teaspoons Parmesan Cheese (or vegetarian cheese)
- Heat oil in a large skillet over medium heat.
- Add onion and cook until soft and golden brown, about 10 minutes.
- Add squash, garlic, salt and pepper.
- Add 1/2 cup water.
- Cover and let simmer aout 15 minutes until squash is cooked.
- Stir in Par-Cel.
- Serve squash mixture over cooked pastea and sprinkle with cheese.
An unusual, hearty vegetable dish. Very tasty and a healthy option for supper!
