- 1 apple, cored, cut into large chunks
- 3 tablespoons lemon juice
- 3 cups baby Spinach leaves
- 1/4 cup Par-Cel, chopped stems and leaves
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon apple cider vinegar
- 2 tablespoons agave nectar
- 1/4 cup carrots, shredded
- 1/2 cup walnuts, chopped
- Toss apples with 1 tablespoon of the lemon juice.
- Remove long stems and wash spinach leaves with cold water.
- Dry excess water from leaves and place spinach in a large bowl.
- Whisk together remaining juice, olive oil, vinegar, agave nectar, salt and ground pepper to taste.
- Toss spinach with apples, Par-Cel, carrots and dressing.
- Top with walnuts.
- Serve immediately, so salad is fresh and crisp.
