- 1 1/2 kg fresh spinach
- 2 tablespoons extra virgin olive oil
- 2 garlic cloves, finely chopped
- 50g sultanas
- 50g pine nuts
- salt and pepper
- 4 tablespoons parsley, fresh, chopped
- Wash the spinach thoroughly and remove the long stems.
- Cook the spinach in very little water in a covered pan for 5 mins, then drain and chop.
- Heat the olive oil over a medium to low heat and add the finely sliced garlic, sultanas and pine nuts.
- Fry gently for 2 - 3 minutes, stirring all the time so that the pine nuts brown but do not burn.
- Add to the spinach.
- Mix all ingredients together and season with salt and pepper.
- Sprinkle 1 tablespoon of chopped parsely over the top of each serving.
- Serve straight away, for best flavor.
This dish is so easy and quick to make, and has a lovely flavor with different textures.
This recipe is also very nutritious and can be eaten by itself; or else pair it with your favorite main course.
