15 min cook | 15 min prep

 Serves: 4

  1. In a saucepan bring water to a boil.
  2. Add quinoa and a pinch of salt.
  3. Reduce heat to low, cover and simmer for 15 minutes.
  4. Allow to cool to room temperature; fluff with a fork.
  5. Meanwhile, in a large bowl, combine olive oil, sea salt, lemon juice, tomatoes, cucumber, green onions, carrots and parsley.
  6. Stir in cooled quinoa.
  7. Serve on its own, or with your favorite dish.

What a great meal for a hot summer day!  The longer it sits, the better it tastes!  

This is such a healthy recipe, it contains lots of vitamins, minerals, anti-oxidants and fiber.
