Dips are very popular in the summer months. I have listed my three favorite dips that I use often and you are welcome to try!
Rosemary - Parsley Dip
- 1/2 cup mayonnaise
- 1/2 cup cream cheese
- sprig, Rosemary, fresh or dried leaves, finely chopped
- small bunch, Parsley, fresh chopped
- 1/2 small onion, chopped
- 1 tablespoon grated parmesan cheese
- salt and pepper to taste
- Use mayonnaise and cream cheese in equal amounts, and whisk together.
- Add Rosemary, Parsley, onion and mix together.
- Lastly, add parmesan cheese and seasoning to taste.
- Keep in fridge for at least one hour, to let the flavors meld together.
- Serve in bowl, surrounded by your favorite vegetables.
Dill, Parsley, Thyme Dip
- small bunch, Parsley, fresh chopped
- 2 or 3 sprigs, Thyme - Lemon, fresh leaves chopped
- small bunch Dill, fresh chopped
- 1 teaspoon Lemon Zest
- 1 teaspoon Poppy Seed
- 1/2 cup Mayonnaise
- 1/2 cup Cream Cheese
- salt and pepper, to taste
- Whisk together mayonnaise and cream cheese.
- Add Parsley, Lemon Thyme and Dill, mix together.
- Add Lemon Zest and Poppy seed, mix again.
- Add salt and pepper to taste.
- Keep in fridge for at least one hour, to let the flavors meld together.
- Serve in bowl, surrounded by your favorite vegetables.
Lemon Balm - Mint Dip
- 1/2 cup Mayonnaise
- 1/2 cup Fetta Cheese
- 2 sprigs, fresh English Mint (or your favorite mint), leaves chopped
- 2 sprigs, fresh Lemon Balm, leaves chopped
- 1 stick, Celery, chopped finely
- Salt and Pepper, to taste
- Mix together Mayonnaise and Fetta Cheese, in a bowl, until well blended.
- Add chopped, Mint, Lemon Balm, and Celery, mix well.
- Add salt and pepper to you liking.
- Place in fridge, until needed.
- Serve surrounded by your favorite veggi sticks and crackers.

- —as a rule use 2 or 3 'Texture Ingredients' from list below
- Tomato
- Onion or Green Onions
- Salt & Pepper
- Salsa
- Parmesan cheese
- Celery
- Poppy Seeds
- Sesame Seeds
- Pumkin Seeds
- Red, Green and Yellow Peppers
- Cucumber
- Chopped nuts
- All herbs and vegetables should be used fresh, and finely chopped. (Dried herbs can be substituted in the Winter)
- Once you have chosen:-
- 2 'Base Ingredients'
- Plus 2 or 3 'Herbs'
- Plus 2 or 3 'Texture Ingredients'
- Then mix them all together thoroughly.
- Place the dip in the fridge for at least one hour, for the ingredients to meld together.
- There you have it! Your own special dip!!
