- 2 1/2 cups flour
- 1 1/2 cups sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 tbsp crushed, dried lemon verbena, or 3 tbsp fresh Lemon Verbena leaves, finely chopped
- 3/4 cup orange juice
- 3/4 cup vegetable oil
- 2 teaspoons lemon extract
- 2 teaspoons dried lemon peel
- 4 eggs
- Pre-heat oven to 325°F.
- Blend all ingredients by hand until moistened.
- Then beat with an electric mixer for 3 minutes at medium speed.
- Spray two 4 1/2″ by 8 1/2″ loaf pans with non-stick spray.
- Pour batter into the two prepared loaf pans.
- Place in pre-heated oven.
- Bake for 40-50 minutes or until a toothpick inserted in the center comes out clean.
- Cool on rack before removing from pan.
- (Alternatively, bake in 5 small loaf pans for about 30 minutes.)
- Can be eaten plain or topped with 'Stevia Frosting', recipe on this website.
- When cake is cool, remove from baking pan, and slice into 1/2 inch slices.

A coffee grinder is great for finely chopping dried or fresh herb leaves, but keep 'herb-coffee grinder' only for herbs. (Buy a separate coffee grinder just for coffee.) :)
