crust
- 2 cups flour
- 2/3 cup powdered sugar
- 2 1/2 teaspoons dried Thyme-Lemon, or 2 tablespoons fresh Thyme - Lemon, chopped leaves (or choose from Thyme list below)
- 1/2 teaspoon salt
- 1 cup butter
filling
- 1 1/4 cups sugar
- 3 tablespoons flour
- 3/4 teaspoon powdered ginger
- 1/2 teaspoon baking powder
- 1 tablespoon lemon zest
- 1/2 cup lemon juice
- 3 eggs, beaten
glaze
- 4-5 teaspoons lemon juice
- 1 cup powdered sugar
- Preheat oven to 350°F.
- Combine all the crust ingredients (except butter) in a bowl.
- Cut in the butter until the mixture is coarse and lumpy.
- Set aside about 1 cup of the crust mixture.
- Pat the remaining crust mixture into a greased 9x13 baking pan.
- Bake 15-20 minutes until golden.
- Remove from oven, but leave the oven on.
- Prepare the filling: combine the dry ingredients in a medium bowl.
- In a separate bowl whisk together the zest, lemon juice and eggs.
- Whisk the wet and dry together until well blended.
- Pour the filling over the warm crust.
- Sprinkle the remaining crust mixture over the top and bake for 25 minutes.
- Let cool.
- Prepare the glaze by mixing the lemon juice, zest and powdered sugar until smooth.
- Drizzle over the bars.
- Cut into bars while still in the pan and let cool completely.
- Remove bars with a plastic spatula and place in a air-tight container.

These are so good, it may be an idea to make a double batch, and freeze some for another day!!
A coffee grinder is great for finely chopping dried or fresh thyme leaves, but keep 'herb-coffee grinder' only for herbs. (Buy a separate coffee grinder just for coffee.)
