SERVES 8 , 24 small pancakes
- 2 cups all-purpose flour
- 1 teaspoon salt
- 2 teaspoons baking soda
- 1/4 cup sugar
- 1/2 teaspoon ground dried Thyme, or 1 1/2 teaspoons, Thyme - Fragrant Orange, finely chopped leaves (or choose from Thyme list below)
- 2 eggs
- 1 3/4 cups orange juice
- 1/4 cup melted butter or margarine
- Mix dry ingredients in a bowl.
- Beat eggs in a separate bowl.
- Add orange juice and melted butter and mix well.
- Mix liquids into dry ingredients.
- If batter seems stiff, add a little more orange juice.
- Drop batter on griddle.
- Turn pancakes when bubbles start to form on top.
- Serve with Orange Butter Syrup (recipe on this website)
- Or syrup of your choice.

These Pancakes are delicious! If you don't eat them all, they freeze well!! Serve with 'Orange Butter Syrup', find recipe on this website, under Plants, Thyme - Fragrant Orange. A coffee grinder is great for finely chopping dried or fresh thyme leaves, but keep 'herb-coffee grinder' only for herbs. (Buy a separate coffee grinder just for coffee.)
