SERVES 12
- 1 cup unbleached white flour
- 3/4 cup whole wheat flour
- 1/4 teaspoon salt
- 1 teaspoon Splenda granular or sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons dried Thyme or 1 1/2 tablespoon fresh Thyme leaves, chopped (choose from Thyme list below)
- 3 tablespoons unsalted butter, cut into small chunks
- 1/4 cup skim milk
- 1/2 cup plain nonfat yogurt (or you can replace the yogurt AND milk with 3/4 cup of buttermilk)

- Preheat the oven to 450°F.
- Prepare baking sheet with a light coating of cooking spray.
- Sift together the flours, salt, sugar, baking powder, and baking soda.
- Stir in the thyme.
- Add the butter, and rub fat into the flour using your finger tips, so the mixture has the consistency of coarse cornmeal.
- Step #5, can also be done in a food processor fitted with the steel blade, using the pulse action.
- Stir the milk and yogurt (or buttermilk) into the mixture.
- Lightly flour your hands.
- Using your hands, bring the dough together until it forms a ball.
- Use care not to over kead the dough (as you would with bread) as that will result in hockey pucks not biscuits!
- The mixture will be slightly sticky, that's okay. Again, the less you work the dough, the lighter your biscuits will be.
- Roll out to a thickness of about 3/4 inch and cut into squares, triangles, or rounds.
- Place on the prepared baking sheet and bake for 12 to 15 minutes, until they're just lightly browned.
- Serve warm.
Thyme savory flavor:- Thyme - Compact English, Thyme - English, Thyme - Provence, Thyme - Tabor. (use if having biscuits with soup, salad or main dish)
Thyme lemon flavor:- Thyme - Creeping Lemon, Thyme - Golden Lemon Variegated, Thyme - Lemon, Thyme - Siver Lemon Variegated. (use if having biscuits with tea, dessert or snack)
Delicious biscuits, with either a savory flavor or lemon flavor! They are very versatile and can be eaten with lunch or evening meal.
