SERVES 4
- 2 cups chicken breasts, cooked and cubed into 3/4 inch pieces (see note*)
- 1/4 cup onion, chopped finely
- 1/4 cup celery, chopped finely
- Hellmann's mayonnaise (to taste)
- 1 tablespoon, Tarragon - All Seasons, or, Tarragon - French, chopped finely
- salt or garlic salt (to taste)
- generous amount of fresh cracked black pepper
- optional: chopped tomato, chopped apples, grapes – halved, chopped walnuts or pecans, sunflower or pumpkin seeds
- *Poach the chicken breasts in some chicken stock and fresh herbs (parsley, basil etc.) for added flavor.
- Mix all ingredients and chill for 1 hour.
- Serve on a bed of lettuce, or place salad in a wrap.
The Tarragon gives this dish such a wonderful flavor, and makes it much more interesting than the usual chicken salad.
