SERVES 4
- 1 garlic clove, minced
- 1 sprig fresh Rosemary, chopped (choose from list below)
- 1 sprig fresh Thyme, chopped (choose from list below)
- 1 sprig fresh Savory, chopped (choose from list below)
- salt and pepper, to taste
- 1 tablespoon olive oil, plus more if needed
- 4 medium potatoes, peeled and quartered
- 1 lb Italian sausage, cut into 1" chunks
- 2 large bell peppers, cut into thick slices
- 2 large yellow onions, cut into large chunks
- 1 lb mushroom (either small mushrooms or large & cut into chunks)
- 4 ounces mozzarella cheese, shredded (optional)
- Preheat oven to 400°F.
- Combine herbs, olive oil, salt, pepper and potatoes and toss to mix.
- Place sausages and potatoes in large baking or roasting pan.
- Roast at 400°F for 30 minutes, or until the ingredients are just beginning to brown, turning several times.
- Add a little more oil if the potatoes appear to be drying out.
- Add remaining vegetables and roast for additional 45 minutes, turning occasionally.
- Remove from oven when, potatoes are brown on the outside and tender on the inside.
- Sprinkle mozzarella over ingredients. (Optional)
- Return to the oven; remove as soon as the cheese is melted.
