SERVES 4
- 4 medium potatoes, peeled and cut into 1/8 inch slices
- 1 medium onion, chopped
- 1/4 cup water
- 2 tablespoons olive oil or canola oil
- 1 tablespoon minced fresh sage (choose from the Sage list below)
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup low-fat plain yogurt
- Pre-heat oven to 450°F.
- Spray an 11 x 7 x 2 inch baking dish with PAM, or other non stick spray.
- Layer the potatoes and onion.
- Combine the water, oil, sage, salt and pepper.
- Pour over potato mixture.
- Cover and bake at 450°F for 45 to 50 minutes or until potatoes are tender, stirring twice.
- Transfer to a mixing bowl, add yogurt and mash until creamy texture is reached.
Sage Varieties to choose from: Sage - Garden, Sage - Golden Variegated, Sage - Grower's Friend, Sage - Purple, Sage - Silver, Sage - Tricolor.
This is an unusual version of mashed pototoes! Once you have tried this recipe, you won't want to eat mashed potatoes any other way!!
