SERVES 3 -4
- 1/4 cup red wine.
- 4 cloves garlic, minced.
- 1 teaspoon dried Oregano, or 1 tablespoon fresh Oregano, chopped . (choose from Oregano list below).
- 1 medium onion, diced.
- 1 sweet green, red or orange pepper, diced.
- 1 chili pepper, diced .
- 1 medium tomato, diced.
- 1/2 lb button mushrooms, cleaned.
- Simmer the garlic, onion and Oregano in the wine for 5 minutes.
- Add peppers, green and chili, and simmer for 2 minutes, stir occasionally.
- Add tomatoes and cook for 2 minutes.
- Add mushrooms and simmer until the sauce has thickened and the mushrooms are cooked.
A lovely side dish for chicken, steak or fish.
