- 1/2 cup butter, melted
- 1/2 cup flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 10 large eggs
- 1 lb cottage cheese, drain liquid
- 8 ounces monterey jack cheese, shredded
- 8 green or red chili peppers
- 1 tablespoon fresh, Parsley - Curled, or Parsley - Flat Leaf Italian, chopped.
- Preheat oven to 350°F.
- Combine first four ingredients.
- In separate bowl, beat eggs well and combine remaining ingredients.
- Fold mixtures together.
- Spray 11" x 13" with Pam, to avoid souffle sticking to dish.
- Pour mixture into prepared 11" x 13" dish.
- Bake for 40 minutes or until toothpick inserted in center comes out clean.
A tasty main course for brunch or dinner.
