- 4 chicken breasts
- 1/2 cup butter, melted
- 2 lemons, juice of, reserved
- 1 teaspoon garlic salt
- 1 tablespoon paprika
- 1 tablespoon fresh, chopped Oregano leaves (choose from the Oregano list below)
- pepper to taste
- Combine butter, lemon juice and seasonings.
- Marinate chicken breasts for 3-4 hours in this butter sauce.
- Grill or barbeque, basting often with remainder of the sauce.
- Alternatively, you can bake at 350°F for 1 hour or until chicken is cooked, basting often.
- Serve with hot rice and hot mixed vegetables, or with mixed salad and crusty bread.
It is fun to cook this recipe on the barbeque in the summer and use fresh oregano, and in the winter it can be cooked in the oven and use 1 teaspoon dried oregano.
