SERVES 4
- 8 medium fresh tomatoes
- 1 cup + 1/4 cup chicken and herb seasoned stuffing mix, divided
- 1 small onion, chopped
- 1 1/2 teaspoons sugar
- 1 teaspoon salt
- 1/4 teaspoon dried Oregano, or small sprig Oregano (leaves taken off stem)
- 1/4 teaspoon dried Rosemary, or small sprig Rosemary (leaves taken off stem)
- 1 tablespoon butter
- Preheat the oven to 375 degrees.
- Cut the tomatoes into quarters; reserve the juice that accumulates when you cut them.
- In a large bowl, combine the tomatoes, accumulated juice, 1 c stuffing mix, onion, sugar, salt, oregano and rosemary.
- Mix well and pour in a greased 1 quart casserole.
- Sprinkle the remaining 1/4 stuffing mix on top of the tomatoes and dot with butter.
- Bake at 375 for 45 minutes.
Spicy Oregano:- Oregano - Cuban (very spicy), Oregano - Greek, Oregano - Hot & Spicy, Oregano - Italian.
Mild Oregano:- Oregano - Compact, Oregano - Golden, Oregano - Thumbles Gold, Oregano - Variegated.
Rosemary varieties to choose from: Rosemary - Barbecue, Rosemary - Foxtail, Rosemary - Garden Pink, Rosemary - Gorizia, Rosemary - Ingauno Blue, Rosemary - Huntington Carpet, Rosemary - Sissinghurst Blue, Rosemary - Spice Island, Rosemary - Tuscan Blue. The different varieties of Rosemary have a different flavor, so choose the one you like best!!
