- 2 eggs
- 2 teaspoon Chives, or Chives - Garlic
- 2 teaspoons bacon bits
- 2 teaspoons cheddar cheese
- 2 tablespoons vegetable oil (for frying)
- In a bowl, whisk together eggs, 1 teaspoon fresh Chives, bacon bits and cheese.
- Heat oil in a non stick frying pan, pour in egg mixture, (do not stir), cook over medium heat.
- When egg is cooked, fold the omelet in half and garnish with remaining chives, salt and pepper.
- Serve with salad and crusty bread.
- A delicious light meal!
