SERVES 1

  1. In a bowl, whisk together eggs, 1 teaspoon fresh Chives, bacon bits and cheese.
  2. Heat oil in a non stick frying pan, pour in egg mixture, (do not stir), cook over medium heat.
  3. When egg is cooked, fold the omelet in half and garnish with remaining chives, salt and pepper.
  4. Serve with salad and crusty bread.
  5. A delicious light meal!
