55 min | 15 min prep

 SERVES 12

  1. Pre-heat oven to 325°F.
  2. Blend all ingredients by hand until moistened.
  3. Then beat with an electric mixer for 3 minutes at medium speed.
  4. Spray two 4 1/2″ by 8 1/2″ loaf pans with non-stick spray.
  5. Pour batter into the two prepared loaf pans.
  6. Place in pre-heated oven.
  7. Bake for 40-50 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool on rack before removing from pan.
  9. (Alternatively, bake in 5 small loaf pans for about 30 minutes.)
  10. Can be eaten plain or topped with 'Stevia Frosting', recipe on this website.
  11. When cake is cool, remove from baking pan, and slice into 1/2 inch slices.

 

This is an awesome cake and will certainly impress your family and friends! 

A coffee grinder is great for finely chopping dried or fresh herb leaves, but keep 'herb-coffee grinder' only for herbs.  (Buy a separate coffee grinder just for coffee.) :)
